Chicken Scramble

Hey folks,

Haven't worked out yet, but decided to say hello right after breakfast..... which was the chicken scramble. You gotta try this... it was AWESOME! Here's the recepie (at least for phase 1 of the workout):

6 egg whites
3 oz. chicken breast, cooked and diced
1.5 oz. fat free Parmesan cheese, grated
1/2 tbsp chopped fresh basil

1. Coat a nonstick skillet with cooking spray and place over medium heat.
2. Lightly beat the eggwhites with a fork and add to the pan. Cook, stirring until halfway set. Add the diced chicken and cheese and cook halfway through. Salt and pepper to taste.
3. Garnish with fresh basil and serve.

per serving; 320 calories, 6g total fat (17% cal from fat), 49g protein, 16g carbohydrate, 78mg cholesterol, 678mg sodium (more if you salt and pepper to taste, obviously)

Wish I had taken a picture of it... it was not only yummy and smelled great while I was cooking it, but it was pretty too! :-)
